When I was a child I was in love with both Strawberry Shortcake the cartoon and the Good Humor ice cream bar by the same name. (I’m sure I’d still be a fan of the ice cream bar if I could get my hands on one!) My mom grew strawberries in our yard when I was growing up in New Jersey. And having lived in Florida later in my childhood, I was exposed to all the strawberries I could handle since so many are grown there.

I’m a big berry fan in general so I usually have strawberries in my fridge when they’re in season. Even though it’s not strawberry season, I recently purchased some that I used for fruit salad, spinach salad and snacking on their own. But my favorite thing to do with strawberries is to make the easiest dressing ever.

Strawberry Balsamic Dressing

Prep Time: 5 minutes

Ingredients
1 C Strawberries
2-3 T of Balsamic Vinegar
1-2 T of Olive Oil (optional)
Salt and Pepper (optional)
*adjust to desired taste and texture

Preparation
All you do is remove the stems from the strawberries, purée them in a blender, add balsamic, mix a bit more and you’re done!

This dressing works well on spinach salad, arugula and even as a dip for apple slices.
